Cultivation
It is grown in Jamaica, in the largest and highest mountain range in the Caribbean, the Blue Mountains, where the combination of climate and soil is considered ideal. The climate of the region is cool and foggy with high rainfall. The soil is rich in minerals due to the volcanic soil.

Clydesdale
Clydesdale Estate, founded in the late 1700s by Dr Colin McClarty, a British citizen, was one of the first estates to plant coffee in Jamaica. It is a renowned coffee growing area located in the parish of Port Royal at an average altitude of 1000 metres. It is located on the Grand Ridge, which is home to Jamaica's largest National Park and forest, in the heart of the "Blue Mountains".

Harvest
The harvest is done by hand, selecting only the perfectly ripe, red cherries. This painstaking process ensures the highest quality and uniformity of the berries. The cherries are then cleaned and washed to prepare for the next stage.

Drying
After washing, the beans are spread out to dry naturally in the sun. The drying process is closely monitored to achieve the ideal moisture level (around 11%), which is crucial for maintaining quality and avoiding mold.

Transportation
After drying and sorting, the coffee is packaged and transported exclusively in distinctive wooden barrels, instead of the usual jute bags. This protects the precious beans and is a hallmark of its authenticity.

Certification
Jamaica Blue Mountain® coffee is inspected and certified by the Coffee Industry Board (CIB) of Jamaica. This seal guarantees that the coffee has been grown in the specified geographical area and meets the strictest quality standards, making it one of the most protected and sought-after coffees in the world.
